Tsuboichi's Passion

The reason people trust us is our history of 157 years. Having a mutual relationship of trust with the tea-producing area is imperative when one tries to purchase good quality tea leaves. Because of the long friendships we have with the producers, we get reports of what is going on in the present, allowing us to gather truly good tea leaves.

The company that has a cha-kanteishi(Tea Taster) and tea instructors

Tea is a product of the field. The end product depends a great deal on the weather. Even a renowned tea region does not always have the same taste from year to year. But the customer wants to his tea to taste the same every day. To make tea with a consistent taste, the tea from the producer must be appraised, requiring the ability to select from the tea leaves that have been gathered.
Because tea is a product of the field, its flavor and fragrance varies as to when it is picked. And there will be years when tea cannot be made at all from some fields due to the weather.
But not selling any tea because we couldn’t pick any this year would inconvenience our customers. So, with the Japanese tea industry as well as with the coffee and black tea industries, blending is an important technique.
In our company, we have a ‘tea-tasting’ specialist, a sixth degree tea appraiser. We also have four Japanese tea instructors who follow after. Tea is a natural product, so tea made by the same person at the same place does not always have the same quality or flavor. So we look carefully at each tea leaf.

The process of firing (roasting) and blending is very important.

Judgments as to blending are made in conference with the Tea Appraiser (sixth degree), Factory Superintendent and the Firer (Roaster). Nothing is done alone. Also, of the seven workers involved in the finishing process, two are capable of doing the firing process. factory manager

Firing (Roasting) The finishing process whereby the tea leaves are heat-dried. The purpose of this is not just to dry the leaves, but it is important to maintain quality and bring out the flavor. The one who does this is called a Firer (Roaster).
Blending In order for consistent quality tea to be drunk throughout the year, the peculiar characteristics of the flavor and shape of the tea leaves are taken into consideration and mixed.
Tea Appraiser In order to purchase high quality tea, it is necessary to make use of a professional’s sense of sight and taste. Appraisers are certified at an annual competition sponsored by the National Tea Industry’s Youth Association, the only one of its kind in Japan.
Japanese Tea Instructor The Japan Tea Central Association seeks to develop the Japanese tea culture by promoting a proper understanding of tea. To do this, they certify those people who have a broad knowledge, skill and understanding in regard to tea.
