Tea is a product of the field. The end product depends a great deal on the weather. Even a renowned tea region does not always have the same taste from year to year. But the customer wants to his tea to taste the same every day. To make tea with a consistent taste, the tea from the producer must be appraised, requiring the ability to select from the tea leaves that have been gathered.
Because tea is a product of the field, its flavor and fragrance varies as to when it is picked. And there will be years when tea cannot be made at all from some fields due to the weather.
But not selling any tea because we couldn’t pick any this year would inconvenience our customers. So, with the Japanese tea industry as well as with the coffee and black tea industries, blending is an important technique.
In our company, we have a ‘tea-tasting’ specialist, a sixth degree tea appraiser. We also have four Japanese tea instructors who follow after. Tea is a natural product, so tea made by the same person at the same place does not always have the same quality or flavor. So we look carefully at each tea leaf. |

Judgments as to blending are made in conference with the Tea Appraiser (sixth degree), Factory Superintendent and the Firer (Roaster). Nothing is done alone. Also, of the seven workers involved in the finishing process, two are capable of doing the firing process. |
